Roasted Crockpot Whole Chicken

Ingredients:

  • 1 3-4lb whole chicken
  • 2 large potatos
  • 5 carrots
  • 1/2 onion
  • Poultry seasoning

Preparation:


1. Cut onion, potatoes and carrots into 2-3" sized chunks. Place in the bottom of crockpot.


2. Place washed, and dried whole chicken on top of vegetables and season generously with your favorite poultry seasoning.


3. Cook on high setting for 1 hour. Then switch to low setting for 7-9 hours.

Spinach Stuffed Chicken

Ingredients:
  • 4 skinless, boneless chicken breasts
  • 1/2 cup mayo
  • 2 cloves chopped garlic
  • 1/2 cup crumbled feta
  • 1 package chopped frozen spinach (10oz)
  • Bacon slices

Preparation:


  1. In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.
  2. Carefully butterfly chicken breasts, making sure not to cut all the way through. Spoon spinach mixture into chicken breasts. Wrap each with 2-3 pieces of bacon, and secure with a toothpick. Place in shallow baking dish. Cover.
  3. Bake at 375 degrees F (190 degrees C) for 1 hour, or until chicken is no longer pink. Uncover for 5-10 additional minutes to crisp up bacon.
I served this with a tomato, cucumber, and feta salad tossed in Italian dressing, and a side of couscous.

Crockpot Wild Rice Stuffed Turkey

Prep Time: 15 minutes
Cook Time: 7-8 hours

Ingredients:

  • 1-1/2 cups wild rice
  • 1 onion, finely chopped
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts or roasted pecans
  • 2 apples, chopped
  • 2 cups water
  • 1 can chicken broth
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 teaspoon poultry seasoning
  • 3-4 lb.boneless whole turkey breast, thawed if frozen

Preparation:

Chop apples and onion coarsely and mix with rice, dried cranberries, thyme, salt, pepper, and poultry seasoning; place in bottom of 4-5 quart crockpot.



Pour water and chicken broth over, making sure all wild rice is covered with water. If turkey breast is frozen, thaw it. Place turkey on top of rice mixture.

Cover crockpot and cook on low for 7-8 hours until turkey is thoroughly cooked and reaches 160 degrees on a meat thermometer, and wild rice is tender and popped.
